• 100% Pinot Noir
  
• 12% - Vines aged 40/50 years
  
• Non-certified organic viticulture. 100% whole-bunch vinification, fermentation with indigenous yeasts for 2-3 weeks and carbonic maceration in steel or wooden vats, minimal extraction by wetting the cap with buckets and pallets at 2-3 feet towards the end of fermentation, aged for 10-18 months in used barrels, blending in tank for 1 month, no fining, no filtration, SO2 added only before bottling (approximately 10 ppm).
