• The bunches were hand-picked and vinified separately. This was followed by semi-carbonic maceration for about a week in covered vats without the addition of CO2. Indigenous yeasts were used, without commercial inoculant. Malolactic fermentation, as with other reds in the line, took place.
  
• Aged in used 228 L and/or 350 L barrels for 10-12 months; Subsequent separation/assembly in vats for approximately 1 month; No fining or filtration; Sulphites added in minimal quantities only at bottling.
