• 100% Pinot Noir
• 12.5% ​​- AOP Coteaux Bourguignons - Magnum
• 100% whole-bunch vinification. Fermentation with indigenous yeasts for approximately three weeks. Carbonic maceration in tanks, with deliberately minimal extraction: the grape caps are washed with buckets, and lightly pressed by foot towards the end of fermentation. No fining or filtration is performed, and minimal sulfites are added only at bottling.
• Aged for 10–12 months in used 228 L and/or 350 L barrels. Blended in vats for approximately 1 month before bottling. Total sulfur levels kept below approximately 10 mg/l.
