Bimber is the distillery that shone a spotlight on English Single Malt, and at the same time redefined the very concept of a craft distillery: in a garage in London, Dariusz and his team use floor-malted barley, carry out week-long open vat fermentation, and distill with small direct-fired stills. One cask filled per day, incredible quality starting from the new make: and age becomes just a meaningless number.

With this 4-year-old single cask, we realize the exceptional and unique complexity of the distillate, its maturity and its ability to withstand any aging: the typical notes of honey, propolis and ripe fruit are not affected by almost a year in Pedro Ximenez sherry, which brings hints of sultanas, milk chocolate and a light leather. Constantly evolving, it is a seductive dram.
