• The raspberry is the wild fruit that keeps all its promises to the senses: it captivates the eyes with its color, the nose with its intense aroma, and the taste with its sensual, velvety flavor. For our distillate, we use wild raspberries from the forests of Eastern Europe. Here, the woods are cut down every 40-50 years, and until the trees regrow, wonderful fields of wild fruit develop. We are happy to take advantage of this thanks to our partnership with a cooperative that ships them to us in favorable years. Even in this case, the yield is very low: about 50 kilos of raspberries are needed to produce one liter, but the resulting distillate is extraordinary. A raspberry concentrate enriched with fermentation notes that make it even deeper and more complex.
  
• Double distillation in small copper stills with a bain-marie
• Rest in stainless steel containers for as long as necessary
• Dilution with spring water from the Grappa massif
