The method is traditional dry-pressed: the grapes are hand-picked and gently pressed with only the free-run must. There is no maceration on the skins, and prolonged contact with the skins is avoided to maintain purity and acidity.
- Fermentation begins spontaneously with indigenous yeasts, in large barrels (1,000 L Fuder) for approximately 100 days.
- After fermentation, the wine remains on the fine yeast for around 6 weeks in the Moselian Fuder, contributing structure and depth without the addition of new wood
