- Being a Mosel Riesling (Auslese), the practice of maceration is not applied: the grapes are gently pressed after harvesting, without prolonged contact with the skins.
- Fermentation is spontaneous with indigenous yeasts, in line with the company's rigorous and traditional style.
- Aged for 12 months in stainless steel tanks or large neutral barrels, to preserve freshness, salinity and structure; Production conditions and classification as Auslese guarantee an elegant texture, with a residual sugar that balances naturally with the acidity of the wine.
