The grapes are harvested manually, destemmed and lightly pressed before fermentation in stainless steel tanks at controlled temperature.

Maceration lasts between 20 and 30 days, to extract colour, tannins and structure, then the fermentation of the pressed wine takes place separately
- After fermentation, the wine is aged in oak barrels (barriques) for approximately 12 months, in a semi-underground cellar that favours stable temperatures.
