The production approach is traditional and deliberately minimally invasive: the quality of the fruit and the varietal integrity are prioritised without resorting to excessive manipulation.
- A small portion of whole bunches is used, giving spicy notes of white pepper and increased aromatic complexity.
- The wine ages for 12 months in large wooden barrels (foudres) which are very old, around 90 years old, which give structure and a fine spiciness without overpowering the fruit.
