The bunches are harvested whole and fermented with indigenous yeasts, without destemming.
- A light cold pre-fermentation maceration of a few days is used, followed by traditional alcoholic fermentation with piges and remontages for approximately 2-3 weeks, in order to obtain delicate and elegant extractions.
- The base wine is divided between used oak barriques and steel tanks for approximately 9 months.
- After assembly, the wine completes its refinement with a further 12 months in steel before being bottled.
