Cask 443, made of virgin oak charred to level 2, captivated us and Cristian Camnasio, the soul of "Daiquiri cocktail bar" in Cormano, with whom we shared the selection and bottling process. Its surprising balsamic character, with aromatic herbs and eucalyptus, struck us like a gust of wind from the forests of the West Coast. The uncompromising power, combined with a lively palate and Copperworks' usual epic tropical fruit, did the rest.
