Being a Blanc de Blancs, maceration on the skins is not foreseen: the grapes are delicately pressed and vinified only with the free-run must, without contact with the skins to maintain aromatic purity and light colour.

The alcoholic fermentation is carried out in neutral wood (barrique or foudre), with indigenous yeasts and without malolactic fermentation, so as to preserve tension and freshness.
