The Domaine Pattes Loup vineyards are located in the villages of Courgis and Preys. The vines are the result of massal selection carried out by Thomas Pico's grandfather.
Thomas Pico works with spontaneous fermentations carried out by indigenous yeasts, using minimal amounts of sulfur dioxide and avoiding filtering his wines before bottling. Domaine Pattes Loup wines strictly respect the typicality of Chablis in terms of minerality, vitality and structure.
