- Manual harvest, gentle and very slow pressing of whole grapes (~5 hours), without destemming or contact with the skins
- Natural sedimentation followed by slow fermentation in foudre (large oak barrels) for about a month, on indigenous yeasts, without the addition of carbon dioxide or other agents, according to traditional and organic philosophy.
