    • Cabernet Sauvignon, Merlot, Nebbiolo
    • 14.5% - 10/70 year old vines - 550 m above sea level
    • Fermentation is spontaneous with indigenous yeasts, without the use of clarification or filtration; Roddolo prefers long contact with the lees to extract structure and aromas.
    • While no maceration times are specified for the 2011 vintage, the process has been described as “traditional,” with fermentation in steel and then long aging in large barrels: this typically involves prolonged macerations (approx. 2–3 weeks) with moderate pumping over of the skins to extract tannins and color in a balanced and fruit-friendly manner.
    • The wine underwent prolonged refinement in large used wooden barrels, to ensure slow oxygenation and gentle but constant maturation of the wine without overwhelming the fruit with aromas of new wood.
    • Flavio Roddolo bottles wines only when he believes they are truly ready, sometimes even more than 10 years after the harvest.
