Fermentation in barrique, with indigenous yeasts and uncontrolled temperature, and blocked malolactic fermentation to preserve freshness and tension

- The base wine ages for approximately 10 months in used barriques, giving structure and creaminess without excessive toasting.
- After the second fermentation according to the classic method, a long refinement on the lees in the bottle follows for at least 36 months before dégorgement.
