- 12.5% - 1g/l - 420/450 m above sea level - The vinification takes place through direct draining from the press, totally in white, with direct pressing to preserve elegance and finesse.
- The base wine ages for approximately 8 months in stainless steel on the fine lees
- The tirage according to the classic method takes place in the spring following the harvest, with secondary fermentation in the stack for approximately 60 months.
- Disgorgement is done manually, without artificial freezing. No liqueur d'expédition is added: topping up is done exclusively with the same wine aged on the lees.
