Blanc de Blancs from Chardonnay grapes grown in our vineyards in Kent and West Sussex, vinified with soft pressing and fermentation predominantly in steel with a small portion in wood. Refermentation in the bottle according to the traditional method with long aging on the lees, which contributes to the structure, complexity, and finesse of the bubbles. A taut and linear profile, with notes of citrus, green apple, and bread crust, supported by marked acidity and a mineral finish.
