- The vines are approximately 35 years old and grow on clay-limestone soils characteristic of the Marne Valley, with southern and southwest exposures. Harvested by hand, the grapes are then vinified as a white wine in stainless steel tanks. After a brief period in stainless steel, the sparkling wine undergoes secondary fermentation in the bottle according to the Champenoise Method, with 33 months of aging on the lees. Finally, following disgorgement, the Champagne is given the Extra-Brut designation.
