    • Nebbiolo (Chiavennasca)
    • 13% - 500 m above sea level
    • Spontaneous fermentation in stainless steel, with 70% whole bunches and the remaining 30% destemmed and uncrushed. Maceration lasts 15 days, with two punch-downs per day. A brief period on the lees takes place in stainless steel before being transferred to tonneaux for 16 months. The wine is then bottled without fining or filtration.
