• In its first harvest, "Amima" 2023 represents an unprecedented blend of equal parts Verdicchio, Trebbiano, and Malvasia di Candia. The grapes come from vines rooted in sandy and stony soils, rich in minerals and iron, where yield is deliberately limited: only two bunches per plant, ensuring maximum concentration and quality.
• The manual harvest, carried out between late August and mid-September, respects the nature of each grape variety. The bunches are pressed whole, without destemming, and the free-run must begins fermentation spontaneously thanks to the indigenous yeasts present in ancient concrete vats.
• Each varietal is then aged for 18 months : the Verdicchio ages in Nomblot cement vats, the Trebbiano in wooden tonneaux, while the Malvasia di Candia evolves in Wineglobe glass bottles. After blending and bottling, the wine completes its journey with a further 4 months of bottle aging before reaching its full potential and being released for sale.
