This white wine is made from Chardonnay grapes grown in a small terraced vineyard located in Pincì.
Facing south and managed entirely by hand, the vineyard develops on a calcareous-marly soil known locally as “Sass de Luna”.
Careful grape selection is followed by a two-hour cold maceration in the press, gentle pressing, and low-temperature static sedimentation of the must. The must ferments for the first six days in stainless steel before being transferred to small oak barrels. After fermentation, the wine remains in wood, where it ages on its fine lees for 12 months with periodic bâtonnages. It then ages in the bottle for at least twelve months.
