Wine from prolonged maceration on the skins for approximately 16 days in amphora or tank, at a controlled temperature, with whole bunches in infusion and without in-depth filtration

After maceration, the free-run must is separated by soft pressing, then ferments with indigenous yeasts in used acacia barriques, without clarification.

The wine ages for approximately 24 months in used acacia barriques, in order to give structure while maintaining the varietal profile and the salinity of the terroir.
