- The grapes are harvested by hand, and approximately 15% of the must macerates on the skins for four days. Spontaneous fermentation occurs in stainless steel tanks and small neutral oak barrels. Malolactic fermentation takes place.

Aged for approximately 9–11 months on the fine lees in mixed containers (90% stainless steel and 10% neutral wood)
- No clarification, light filtration, and bottling in August of the second year after the harvest.
