Soil Therapy - Les Vins du Mardi Pinot Gris Materia Rebellis - 2021

Soil Therapy is a natural winery in Alsace , founded by Thomas Larmoyer and Meardey Tek with the aim of enhancing local terroirs . They practice biodynamic practices and cultivate native grape varieties such as Riesling, Pinot Gris, and Gewurztraminer, producing wines that authentically express their soil and climate.

The wines are elegant and complex; among the most representative are Holy Gris and Schiste , known for its marked minerality . The winemaking process involves natural fermentations, long macerations, and aging in used barrels. With a limited production, the winery is now one of the most interesting producers of Alsatian natural wines.
