Vinification of grapes sourced primarily from the municipalities of La Morra and Levice, with a small portion from the municipalities of Vicoforte and Monticello d'Alba. Alcoholic fermentation takes place primarily in cement and partly in stainless steel (depending on the vintage) and lasts approximately 10-12 days. Malolactic fermentation follows in cement or stainless steel, followed by cold stabilization outdoors or in temperature-controlled stainless steel tanks. After stabilization, the wine continues to age for several months in cement, stainless steel, or fiberglass before being bottled, usually between April and May of the year following harvest.
