- The Scheurebe grapes are instead destemmed and subjected to maceration to extract the varietal aromas, before pressing.
- The musts are fermented in steel, without artificial excitement or the addition of selected yeasts, in line with the company's minimal intervention philosophy.
- Pét-Nat (pétillant naturel): the wine undergoes a refermentation in the bottle, creating a light effervescence without the addition of sulfur dioxide or filtration
